1/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 1/3 cups nonfat milk
1/3 cup butter
1/3 cup corn oil
Preheat oven to 400 degrees F. Mix cornmeal,
sugar, baking powder, and salt
in a large bowl. Set aside and mix barley malt or maple
syrup, corn oil, eggs, butter and milk in a medium bowl.
Blend liquid mixture with the cornmeal mixture until moist
and soft.
Pour batter into greased loaf or baking dish
(if you would like flatter cornbread.) Bake 40-45 minutes
or until golden and crispy.
